Basmati rice, rinsed & soaked

Renzo chicken stock

2 cubes

Tomato paste

Green chilies, chopped

Recipe Steps

  • In a large bowl, mix the chicken with the onion, garlic, ginger, turmeric, cumin, ground coriander, black pepper, salt, lemon juice, and olive oil.
  • Marinate at least 1 hour.

Heat a little olive oil in a large pot over medium heat. Add the marinated chicken and cook until browned on all sides, then remove and set aside.

  • In the same pot, add the bay leaves, cardamom, cloves, and cinnamon; sauté for a minute until fragrant.
  • Stir in the tomato paste and green chilies and cook 2–3 minutes.

  • Add the rice and stir to coat it in the spices.
  • Dissolve the 2 Renzo Chicken Stock Cubes in the warm water, then pour into the pot and bring to a boil, the cubes are the best seasoning for rice, giving every grain a savory depth.

Once boiling, return the chicken to the pot. Reduce the heat to low, cover, and simmer 20–25 minutes, until the rice is cooked and the water is absorbed.

Meanwhile, toast the almonds or pine nuts in a separate pan until golden.

Fluff the rice with a fork and serve on a large platter. Garnish with raisins, toasted nuts, and fresh coriander or parsley, a true Saudi kabsa to gather around.
