How to Pan Sear Steak: A Restaurant Quality Crust Every Time

Step-by-step instructions

A professional-level sear isn’t just for fancy restaurants. With a few key techniques, here’s how to pan-sear steak perfectly at home.

  1. Pat it dry, always: This is the most important step. Any moisture on the surface will steam your steak instead of searing it, which prevents browning. 
    Pat it thoroughly dry with paper towels until there’s no visible moisture.

  2. Season liberally: Season the steak well with salt and pepper right before cooking. 
    For a deeper, steakhouse-style crust, add Renzo Beef Stock Powder, which is made as a beef steak seasoning.

  3. Get your pan HOT: Place a heavy-bottomed pan (cast iron or stainless steel work best) over medium-high to high heat. 
    Let it heat for 3 to 5 minutes, until it’s smoking slightly or a drop of water evaporates instantly.

  4. Add a high smoke point oil: Add a thin layer of oil with a high smoke point, like grapeseed, avocado, or canola.
    Swirl to coat. It should shimmer but not smoke aggressively.


  5. Don’t crowd the pan: Cook in batches if you need to.
    Crowding lowers the temperature and releases moisture, leading to steaming rather than searing.

  6. Place it down, then leave it: Gently lay the steak into the hot oil and leave it undisturbed for several minutes.
    Resisting the urge to move it is what lets a crust form.

  7. Check and flip: After a few minutes, gently lift a corner with tongs.
    If it’s deeply golden and releases easily, it’s ready to flip. If it’s sticking, it just needs another minute.

  8. Finish cooking: Continue cooking on the other side until it’s done to your preference.
