Preheat the oven to 210°C (425°F). Trim and wash the roast lamb to remove excess fat, then pat it dry with a cloth.
Rub the lamb all over with your spices, salt, and oil, this lamb seasoning is what builds the deep, aromatic flavor. Place it in a large roasting pan and roast for 20 minutes.
Remove from the oven and add the Renzo chicken broth, quartered onion, and halved garlic. Cover tightly with foil, reduce the heat to 150°C, and roast for about 3 hours, until the lamb is tender and falls apart.
Meanwhile, rinse and drain the rice. In a large pan, sauté the chopped onion in oil until soft, then add the minced beef and cook, stirring constantly, until browned.
Season with salt, mixed spices, cinnamon, and cloves. Add the rice and stir well until everything is combined.
In a separate pan, fry the almonds, pine seeds, and pistachios in a little oil until golden, then set aside..
Once the lamb is fully cooked, transfer it to a serving dish and arrange the rice around or beneath it, the centerpiece of one of the most rewarding roast lamb dishes you’ll make.
Sprinkle the toasted nuts over the rice and serve the rich pan broth on the side.
